Cooking Vlog: 5 Guilt-Free Finger Foods for the Holidays *PART 1*

The Holidays are upon us, folks.

They are without a doubt “the most wonderful time of year” in all aspects of my life-- EXCEPT for my diet. We’ve got Thanksgiving, a multitude of family and friend gatherings, Christmas and New Years all within a 6-week period. And we all know what the common ground is for all of these events: FOOD! Lots and lots of food. And even more food after that. And then there are the drinks. And suddenly, every healthy choice you made every day leading up to November is lost and forgotten. Or maybe, and I hope this is the case, you have better self-control than I do!

Personally, every time I attend one of these gatherings I eat until I am nearing a complete food-coma and then try to justify it based on the "occasion"... but- there is another way! Choosing to steer towards the food options that are higher in protein and lower in carbs/fat can really make a huge difference in how satisfied you feel while snacking at these parties. SO, when my sweet friend LeeAnne (@GradysMom on YouTube and @lluvs13 on IG) approached me about doing a cooking Vlog collaboration -- after I jumped up and down like a little kid from sheer excitement -- I immediately knew I wanted to provide you guys with a tutorial on how to create healthier-option finger foods for those Holiday parties!

Y'all, these are SUCH simple & quick recipes that honestly anyone can create these in a matter of minutes in their own kitchen! And now, you have zero excuses because in the video I will link below we give you a step by step tutorial on how to create each recipe! The 5 recipes that will be featured in this PART 1 of 2 (yep, you can expect another one before Christmas!) are all detailed below the video clip :) P.S.- this was my very first time talking on camera (which is SO much more nerve racking than it seems until you try it) and LeeAnne was such a big help easing my nerves! White Bean Kale & Artichoke Dip

Ingredients:

  • Enough Butter to grease your cast iron pan
  • 2 Tbs Avocado Oil or EVOO
  • 1 Bunch of Kale, ribs & stems removed
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3 cloves of garlic, minced
  • 1 can of white beans, drained & rinsed
  • ½ C Plain nonfat greek yogurt
  • 2 jars of marinated artichokes (6.5 oz drained and chopped)
  • 1 C extra sharp white cheddar cheese (grated)

Instructions:

  1. Preheat oven 350 degrees; Butter a baking dish (10x6” or 8x8” baking dish; I like to use a quiche dish or cast iron pan)
  2. In your cast iron pan, heat oil over medium heat; add garlic and saute' until fragrant; add kale, cooking until wilted & transfer to a large mixing bowl
  3.  In a food processor combine the white beans, yogurt, salt, pepper & cheese and puree until smooth (In the video I added the artichoke in food processor as I like my dip less chunky)
  4. Transfer the bean puree to the bowl with kale, mix in artichokes (if you haven't already)
  5. Spread mixture into baking dish & bake 30 minutes; if you want a browned top place on broil for 3-5 minutes and add a bit more cheese to the top before broiling
  6.  Serve with fresh pita wedges, pita chips or crackers of choice!

Bunless Chicken & Feta Sliders:

Ingredients:

  • 16 oz of Extra Lean ground chicken (could also use beef or turkey
  • 4 oz Garlic & Herb Feta Crumbles
  • 3 garlic cloves minced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp onion powder
  • 3 Roma or Plum Tomatoes, sliced into thin rounds
  • 2 Cups Romaine lettuce, broken into slider sized pieces
  • Short wooden skewers or toothpicks
  • Dipping sauce of choice- I love Primal Kitchens Chipotle Mayo but you could also use ketchup or even Pesto

Instructions:

  1. I use my Panini press which I find is the easiest way to quickly cook my sliders BUT you have the option to cook on grill, griddle, stovetop or bake in oven on 400 degrees
  2. Thoroughly Combine first 6 Ingredients in a mixing bowl
  3. Roll mixture into tablespoon sized balls if using a press into patties if baking in oven (I find that if I oil my hands this works best!)
  4. Cook until center is no longer pink and burgers appear done and begin to turn a golden brown  (If baking this will take about 15-20 minutes)
  5. Once sliders are finished and cooled, assemble onto a wooden skewer or toothpick in the following order: Lettuce, Tomato, Burger & serve with dipping sauce of choice

Sweet Potato Chipotle Shrimp & Guacamole Bites:

 Ingredients:

  • ½ Bag of Alexia Sweet Potato Waffle Fries or Baked Sweet Potato “Chips”
  • 4 Avocados
  • Juice of 1 Lime
  •  ½ tsp red pepper flakes
  •  Handful of chopped fresh cilantro, split in half
  • 1 Tbs Red Wine vinegar
  • ½ lb cleaned & peeled uncooked shrimp
  •  ½ tsp chili or chipotle powder if you have it
  •  ½ tsp paprika
  • ½ tsp cumin
  • 1 tsp salt, split in half
  • ½ pepper
  • 1 Tbs EVOO or Avocado Oil

Instructions:

  1. Bake your sweet potato fries per the instructions on the bag
  2. For Chipotle Shrimp: In small bowl mix shrimp, paprika, cumin, salt, pepper, chili or chipotle powder; Heat oil large saute pan over medium high heat; add Shrimp to pan and cook 2-3 minutes on each side until pink
  3. Prepare the guacamole by combining avocado, lime juice, vinegar, ½ of cilantro, salt & red pepper flakes in a food processor and blending until mixed thoroughly; if you prefer chunky mash/combine with fork
  4. To Assemble: place a dollop of guacamole on top of SP Fry, one shrimp and a sprig of cilantro for garnish

Caprese Skewers:

Ingredients:

  • 1 Container of cherry tomatoes
  • 1 Container of Fresh Basil
  • 1 bag of mozzarella “pearls” (found at publix or harris teeter)
  • Balsamic Glaze (Trader Joes carries a great one for drizzling) or Ken’s Honey Balsamic Salad Dressing
  •  Short wooden skewers or toothpicks

Instructions:

  1. Rinse Tomatoes & Basil; Break apart basil leaves into quarter sized pieces
  2. Assemble skewers with Tomato, basil (may need to fold), and mozzarella pearl, repeat sequence
  3. Drizzle with balsamic glaze if serving immediately or if I am making these the night before I will “marinate” them in a freezer bag with honey balsamic dressing, flipping bag over 1-2 times

Easy Apple Pie Bites

Ingredients: Recipe yields 8 bites

  • ¼ Cup packed brown or Coconut Sugar
  •  1 tsp Apple Pie Spice and additional for sprinkling on top (make your own using all spice, nutmeg and cinnamon)
  • 2 Tbs Grassfed Butter, melted
  • ½ Cup chopped pecans or candied pecans
  • 1 apple sliced into 8 wedges
  • 1 can Pillsbury Crescent Rolls

Instructions:

  1. Preheat oven to 375 degrees, line a cookie sheet with parchment paper
  2. In small bowl, combine sugar and apple pie spice & set aside
  3. Melt butter and toss apple slices in butter
  4. Arrange crescent triangles on baking sheet, brush with butter and evenly distribute sugar-spice on each roll
  5. Sprinkle each roll with chopped pecans
  6. Place apple slice on wide end of triangle and roll to wrap apple slice with dough
  7. Brush roll with remaining butter and sprinkle with remaining apple pie spice
  8. Bake 10-12 minutes or until dough turns golden brown
