*Kodiak Cakes* Confetti Cake Batter Blondies
KODIAK CAKES. If ya don't know, now ya know... My first experience with this brand was when my husband brought home these microwaveable 'Power Cakes Protein-Packed Buttermilk & Maple' flapjacks on-the-go. I was immediately impressed by a few things promised on the label: 100% whole grain, 10 grams of protein, 3 grams fiber & once I tasted them I was SOLD. The very next day I was rushing to the nearest Publix, where I literally swiped every remaining box off the shelf into my basket (which we went through in an ungodly amount of time). To say we were obsessed would be an understatement. As I calculated my macros for each day with the 'myFitness pal' tracker the first thing I would input was my nightly Powercakes. Priorities, am I right? ;)
Then a beautiful thing happened- I discovered their multiple other products! Flapjack & Waffle Mix in a variety of flavors, which I use for just about every savory or sweet item I bake, i.e.- pizza crust, drop biscuits, waffles, cookies, brownies, blondies... you name it, I've used this waffle mix for it! They also carry microwaveable muffins, oatmeal & granola in a cup which all carry a nice little protein punch, which I am always trying to incorporate more of however I can! They even now are carrying protein waffles as well as cookie, brownie and muffin baking mixes! This company is killing the game with flavorful products and I have yet to try one I didn't like. Speaking of- I just got their new seasonal pumpkin flavored minute muffin & their cinnamon-oat waffle/flapjack mix which I will be trying later this week.
Another thing I love about this company is the fact that they have an entire drop-down menu of dozens of recipes utilizing their mixes! This is where I came across the delicious recipe I wanted to share with you in this post: Confetti Cake Batter Blondies... These beauts turned out so moist and tasted JUST like Funfetti cake- which is one of my all time favorites and my annual birthday cake flavor request. I never realized I could make that flavor come alive in my own kitchen so easily - - but seriously guys, check out this recipe- its really just that simple! The only thing I will change the next time I whip these babies up is to create my very own "healthier" version of the funfetti icing to drizzle over top! Sounds like I am going to be making these babies again really soon...
- 1 cup Kodiak Power Cakes
- 3.5 Tbs Truvia Baking Blend (or 1/3 Cup Stevia or brown sugar if preferred)
- 1/4 teaspoon salt
- 1/4 cup egg whites
- 1/2 cup unsweetened apple sauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon butter extract
- 4 tablespoons melted butter or coconut oil
- 3 tablespoons sprinkles & some additional for topping batter
- Preheat oven to 350 degrees and coat an 8×8 or 9×9 pan with non stick spray
- Combine dry ingredients in a large bowl and stir until until combined. Add wet ingredients to dry ingredients and mix thoroughly. Batter should be fairly thick.
- Place batter in prepared pan and spread to edges. Bake for 20-25 minutes until edges brown and easily come away from the pan.
NUTRITIONAL INFORMATION (makes 9-12 servings- I cut mine into 12): BASED ON Serving of 9: Calories- 98, Fat- 5.8 grams, Carbs- 8.5 grams, Protein- 4 grams per serving
