Matcha Chocolate Chip Cookies topped with Honey Roasted Figs

I never considered the fact that I could incorporate Matcha Green Tea Powder into my cooking. Typically, I will blend it into smoothies, with milk to create a Matcha-Latte or I will add it into water for a refreshing energy-boosting Matcha-Water. Now, I've got a whole new domain to utilize this superfood that contains exponentially more antioxidants than any others... BAKING! I saw a recipe by @hiitssteph for her 'Thumbprint Matcha Chocolate Chip Cookies' which is was motivated me to make these beauts- although I tweaked the recipe per usual! These cookies turned out SO tasty considering they are grain, sugar, gluten and dairy free!

Now a little about the superfood that is MATCHA! If you aren't yet familiar with the beauty of Matcha, it is actually green tea leaves that have been dried and stone ground into a fine powder, creating a concentrated and potent alternative to your typical green tea which is brewed by steeping the leaves. Just ONE serving of Matcha powder equates to TEN cups of typically brewed green tea. Matche has been proven to have fat-burning, cardiovascular improving, cancer and free-radical fighting properties among many other health benefits listed below: 

  • Packed with antioxidants including the powerful EGCG group of plant phenols that protect against cancer, improving cognition and aiding in weight loss
  • Boosts metabolism and burns calories
  • Detoxifies effectively and naturally
  • Calms the mind and relaxes the body
  • Is rich in fiber, chlorophyll and vitamins
  • Enhances mood and aids in concentration
  • Provides vitamin C, selenium, chromium, zinc and magnesium
  • Prevents disease, immune support
  • Lowers cholesterol and blood sugar

The list of benefits for Matcha is a mile long and I could go on and on- but for the purpose of my doing more "small recipe segments" I will leave it at that & get straight to the deets on how to make these delicious cookies...

Matcha Chocolate Chip Cookies topped with Honey Roasted Figs

{{ Grain Free, Gluten Free, Sugar Free, Dairy Free, Paleo-Friendly!! }}

  • 2 C Almond or Oat Flour(I used Oat, but the original recipe called for almond)
  • 2 Tbs Matcha Powder (I used Rishi brand I found in the tea section at Earthfare)
  • 3 Tbs Coconut Oil (melted) + 1 tsp coconut oil set aside for drizzle
  • 2 Tbs Maple Syrup (I love Madhava Agave Maple Syrup because it's less carbs than most!)  
  • 1 tsp Baking Powder  
  • 1 tsp Pure Vanilla Extract  
  • 4 Figs, sliced  
  • 1/2 C GF/ Dairy free 'Enjoy Life' Brand Dark Chocolate Chips + 1/4 C set aside for drizzle
  • 1 Tbs Raw Honey  
  • Pinch of salt
  1. Preheat oven to 425 degrees
  2. Slice figs, line up on parchment paper on cookie sheet and drizzle with honey prior to placing in oven for 15-20 minutes for roasting
  3. Meanwhile, thoroughly mix all ingredients in a bowl (except for the 1 tsp of coconut oil & 1/4 C chocolate chips set aside); Mixture should be very doughy and thick
  4. Scoop out Tablespoon sized pieces and roll into a ball in your hands, before placing on parchment covered cookie sheet; take your thumb and press a divot into the cookie (see photo)
  5. Place 4-5 chocolate chips in the indention you create in the cookies
  6. After removing figs, change oven temperature to 350 degrees
  7. Bake cookies on 350 degrees until firm- about 10-12 minutes
  8. Remove cookie and before they cool press a slice of roasted figsdown onto chocolate in center of cookies
  9. Heat your remaining 1/4 C chocolate chips and 1 tsp coconut oil in the microwave until melted together and drizzle over your cooled cookies; I find it easiest to pour the melted chocolate into the corner of a small ziploc bag for the perfect "drizzle" and Y'ALL this tastes and hardens JUST. LIKE. MAGIC. SHELL. No lie. It's amazing!
  10. Now, you only have two options left: a) stare at your beautiful creation or b) DEVOUR THEM ALL! I'm gonna let you guess which I did... ;)
